Cats "BBq Chicken Pineapple Sliders for any weekend!"

 Hey everyone...hope all is going great. Seems like yesterday we celebrated Christmas and now it's Super Bowl weekend. I've been so wrapped up in our crazy life lately that it did sneak up on me. I was shopping yesterday and actually had to wait for a cart. I thought what on earth is going on...did I miss a sale :-) Then I finally grabbed a cart as someone was leaving and I noticed all the super bowl decor and Valentine's Day balloons. Lord where has the time gone already. Well in honor of this wonderful fun weekend, I'd like to share a staple in my home for any weekend. I love this recipe because I can make it...let it simmer and can get things done while it's simmering. Plus, if you are feeding a crowd this recipe is budget friendly and easily doubles. For convenience I purchased a "rotisserie chicken" and shredded it myself.. I prepared in my Cuisinart 4 qt. braiser but you could use a crock pot, insta pot or whatever works better for you. If you're lucky this works great as leftovers served over mashed potatoes for brunch the next day. My fav is serving "open faced" over Kings Hawaiian slider buns. If you do prepare as a "slider" I would recommend using a toothpick to hold all this yummy goodness together. I hope y;all have a great Super Bowl weekend. Here's all you need...

* 2 cups shredded chicken (pork works great too)

* 3/4 cup chopped pineapple (save juice and add to sauce)

* Low Sodium chicken broth (about 3/4 cup...add more if needed as it simmers)

* 1 cup BBq Sauce

* 1/4 c. ketchup

* Kings Hawaiin Slider rolls

Seasons used....1 TB honey, 1 Tb. Worcestershire sauce & red pepper flakes.

Here's all you do...


In a large pan heat on medium low your sauce (all ingredients except the shredded chicken & rolls :-). 

Stir until completely combined with a heat proof whisk. 

Now add your shredded chicken...stir completely and lower heat...cover and simmer for a good 30-40 minutes. Check while it's simmering and add more broth if needed and gently stir as it cooks. The smell is wonderful when entertaining. My son-in-law and grandson love this recipe and it's a definite "touch-down" in our family! 

Serve along with a side salad or chips...endless possibilities!
