"Left-over Lovin'....Anytime of Year!"

 Hey everyone...hope all is well and you're enjoying this festive time of the year. I'm "slowly" getting back to norm if there is a norm lately. Still needing to be careful and resting so I decided to use this time to get recipes and tips caught up instead of complaining. Truth be told this is not my time of year to "take it easy"....I love the Holiday's but as I've gotten a bit older things are done differently and especially lately. So I'll be sharing some of my classic family recipes....some gift-giving ideas that will help a loved one in the kitchen and just some fun "inspiration" to get us through the holiday rush. With that note today's recipe I will be sharing is a "staple" in my family all year round. I do use this recipe with leftovers (turkey especially) but also do the same technique with just sandwich meat slices. Seriously you cannot go wrong with anything wrapped up in a puff pastry sheet...right? As one of my favorite Chef says...it's all about the taste if it turns out pretty... well...that's a bonus :-) 

And I always say...."the best ingredient is a Pinch of Humor in the kitchen"

"Turkey Puffs w/ a honey mustard sauce"


Here's all you need...

1 thawed puff pastry sheet
left over turkey thinly sliced (or sandwich meat)
4 slices of American cheese
1/4 c of colby jack finely shredded cheese (or your choice)
1 egg (I love Eggland Best)
Flaky Salt

Here's all you do...

*Preheat oven to 400*
*Line a baking sheet with parchment paper.
*Use a piece of parchment paper to unfold your puff pastry on so it doesn't stick and also makes an easier work service for clean up :-)
Tip...I use a rollin pin and roll my pastry into a bit larger piece.
*Using a knife...divide your pastry into four squares.
*Make an egg-wash (egg mixed with a little water) and go around the edges with egg wash with your finger or pastry brush. This will help seal the edges.
*Place one slice of cheese on each square of puff pastry.
*Then top with sliced turkey or your preferred meat and sprinkle some grated cheese on top.
Tip...if you like spice this would be the time to add your preferred spices.
*Fold over one side to forn a triangle and crimp the edges using your fingers or use a fork for a more decorative look. 
*Place your "Turkey Puffs" on your parchment lined baking sheet. (see pic below)
*Brush the tops with egg wash and make 3 slits on top with knife & sprinkle with some flaky salt if desired.

Bake for about 15-20 minutes (ovens vary) or until the pastry is cooked until done. 
Serve with a honey mustard dip. I buy honey mustard and then add a bit more honey and some jalapeno juice for a kick and whisk until combined.

Note: You "might" have a goo-ey cheese pull before and during your eating process.

"Update....Step Stool & a Trip was not in the plan"

 Hey everyone...hope all is well. Wanted to update you of what's been happening....I started my series..."Lovin' Fall Y'all" & boy did I "Fall." I took an unexpected trip with a step stool and needless to say for the last 6 wks it's been hard to sit...stand...basically do anything while recooperating with pulled muscles in my ribs. I am "thankful" at my age that I didn't break anything. I bruised my body and my ego for being so "careless" & I'm upset that I havent been able to post my fall recipes. Anyway...life continues and pain meds and rest has helped. So stay tuned and I hope y'all are starting your "fall" off better than I have :-) Stay safe & talk soon!
