"Embrace your Journey ...1 Stitch @ a time in 2024!"

 Hey y'all...hope your holidays have been filled with memorable moments. I'm excited about the New Year approaching. I've realized this year to embrace what life has given me...whether it be good or bad. I'm thankful for my blessings and hoping the difficult times has made me a stronger person. I'm looking forward to a year of sharing my designs and hoping to inspire others as well. I love cooking....sharing sewing & quilting projects with y'all. My designs for this coming year are a bit simpler and maybe that will inspire you to take a few moments for yourself and do what you love. Life is hectic and we need downtime. I always say, "I'm no good to help others if I don't take the time for myself too." I'll be sharing quality items in my projects this year from Missouri Star Quilt Co. plus offering a monthly discount as well. Christmas Eve Blessings!

 Hey everyone....hope your weekend is going great. It's hard to "believe" it's Christmas eve. I love this time of year cherishing the true meaning of the season. I'm blessed to have "family time" this year which makes this a memorable one or best Christmas ever! Now my grandson is older & traditions are a bit different but still memorable. Seems like yesterday he had his first pic with Santa and now he's 13. I'm definitely cherishing his pics displayer throughout my daughter's home. I love Christmas so much that I'll by doing Quilt-Mas Cheer all year on my quilt blog. I'll be featuring "Scrap-a-longs" all year for you to get a jump on your holiday gifts for next year. "Tis the Season 4 Cookies!"

 Hey y'all....hope all has been well and enjoying the Holiday Season. Life has been a bit crazy for me, but we still keep doing what makes us happy. For me...no matter what life brings me health wise being with family and making cookies is still my fav :-) Although traditions are still wonderful, but I have to admit recently I did a "flash back." Yes...I bought that Sugar cookie roll. No judging...they make the best sugar cookies and so easy to decorate. I've been trying to make some fun Christmas gifts and saving time with this slice n bake dough has been a game changer. I'm also sharing with y'all my recent purchase from Thyme & Table. I purchased the silicone baking mat. Y'all I love this mat. Not only is it great for baking but on the back, it's designed for pastry dough as well. It's just wonderful having a great quality silicone mat especially when your baking Christmas cookies. Plus, if you're still needing an inexpensive but great gift then this would make any baker happy. "No Tricks w/this Appetizer!"

 Hey y'all...hope you're having a "spook-tacular" Halloween!. Celebrating this day is a bit different for me now but I still love doing some fun decorating and snacks. I usually decorate the kitchen a bit and change out my seasonal pillow to something Halloween-ish :-) I have a fun & easy pillow tutorial on my quilt blog were I 'hack" a kitchen towel. It's a bit late to make one for this year but you can totally use the same concept with any season. One thing I especially love is receiving everyone's pics of their costumes...candy etc. it brings back fun memories of my daughter dressing up. Well truth be told she still dresses up due to working as a school counselor. I always say..."you're never too old to enjoy life's simple moments1" Trust me as I've aged "gracefully" it's those special moments that keep "us" going. :-) Well, I wanted to share this fast but d'lish recipe with y'all. My time in the kitchen is a bit limited these days with my back issues, so I love a fast recipe that is also practical. When I get a "thumbs up" w/out asking it's a win-win in my book. Let me tell you the funny story of how this recipe developed. I was feeling a bit 'whoozy" on meds but dinner time was approaching. I should have gone grocery shopping earlier but didn't feel like it...I know we all go through it...so, I decided breakfast for dinner. I love the concept of breakfast for dinner but wasn't in the mood for eggs. I wanted pizza but not enough time. So, my brain went to a spin-off of my pizza bites that I love to make for snacks. Needless to say, I'm a true believer of having a jar of spaghetti sauce on hand. So, I started playing with biscuits for a "pizza pocket" idea. These "pizza pockets" were so easy and fast that I'm planning on making them anytime. I will say they would be great for an appetizer when entertaining....a great snack before 'trick-or-treating" or just when you're in a rush. You can totally add your favorite family's ingredients but just remember not to "stuff" them too much or they will seep out. Mine did a bit with the cheese but that was fine with me :-) Oh and definitely use 'parchment paper" on a baking sheet. This helps when stretching out the biscuits as well. I hope y'all enjoy this recipe and have a safe and wonderful "Trick or Treating" eve.

Here's all you need...

* Can of Pilsbury Butter Tastin' Bisquits (your desired amount)

* Jar of Classico Pizza Sauce Traditional Sweet Basil (reserve some for dipping)

* Pepperoni slices...I use Turkey :-)

* Grated Mozzarella cheese

* Dried Italian seasoning (opt)

* Pinch of garlic powder (opt)

Here's all you do...

* Preheat oven to temp on biscuit can.

* Line a baking sheet with parchment paper.

* Carefully stretch each biscuit to about a 5" circular if possible. It gets a bit sticky :-)

* Spread about a tablespoon of spaghetti sauce over biscuit being careful of not getting on edges.

* Sprinkle a bit of Italian seasoning and garlic powder if desired.

* Layer pepperoni slices on one side (see pic)

* Sprinkle grated cheese over pepperoni slices.

* Carefully fold over biscuit to form a half-circle.

* Using your fingers...carefully crimp the edges to enclose the 'pocket."

* Carefully make a few slits on top.

* Garnish with some seasoning if desired.

* Bake as recommended on biscuit can or until golden in color. 

* Dip in spaghetti sauce and enjoy!

Note...Normally you would do a bit of an egg wash to secure edges, but I did not. I think the butter in the biscuit actually helped to keep edges together along with the crimping of edges. This would also be a great recipe to get the "kiddos" in the kitchen!

Cats Tip of the Day!..."I got your Back"

 Hey y'all...hope your Friday is going great. I wanted to share a few products that I absolutely love when sewing...quilting...crafting. I recently received these two products from Missouri Star Quilt Co. The Omnigrid 360 rotating cutting mat has been wonderful along with the ergonomic rotary cutter by Olfa. Sometimes we don't realize how much we bend/stretch when rotary cutting which puts pressure on our backs. I for one know it's so frustrating to do what we love while in pain. Cats Tip of the Day!..."Time-saving Meal Prep!"

 Hey y'all...hope all is going great for you. I'm recuperating from one of my surgeries and I wanted to share this time-saving tip with you. It seems everyone's daily life schedule is hectic and not enough hours in the day. Plus, for some odd reason "dinner time" is a task instead of a time of togetherness. Looking back, I wish we would have sat together at the table more. We all had busy schedules and dinner time during the week didn't get the attention that it should have...hmmm. Sundays were always a day of Church and family time around the table. But during the week it was a grab & go,,,sit up at the kitchen bar.... eat in the living room...boy I could go on with the statement. Sad to say now that everyone is grown, I noticed that my routine is still the same. My dinners now are pretty simple but still delicious due to my limits. Gathering around the kitchen and less around the dinner table. I'm going to challenge myself and maybe y'all to have more family time around the dinner table if you haven't already. Our daily lives are so crazy, and I honestly don't know how y'all do it with kiddos activities. I am proud to say that my daughter does carry on the tradition of weekend togetherness at the table. As a designer I feel the "trend" from sitting at the table to congregating around the kitchen island is because we started designing the huge kitchen island. But I will admit it's so convenient. :-) I'm"guilty" of decorating the table especially for the Holiday's and don't want to mess it up in the meantime. Ridiculous right? My step-grandson even said last Christmas "Gege which towel can I use?" Oh, my word that was embarrassing but led me too how obsessed I am with everything being perfect. Your lives need a little break. I can't add more time to the day for you, but I can share a fast and convenient meal prep to help you with your hectic dinner time meals. I'm still trying to lose weight and I eat a lot of "ground chicken." But for me chicken is pretty bland. Seasoning is a bit more challenging for me now that I'm older and watching my salt intake. So recently I saw a pkg of "Herb ox" sodium free granulated chicken bouillon. I grew up with the cubes, but these are individual season packets and sodium free. Oh my gosh y'all...adding a pkt to ground chicken when cooking has been a dream come true. I also add 1 tablespoon of tomato paste. I cook one pound of ground chicken and season as above then divide in half for two meals. Of course, I'm just cooking for 2 but you could do the same and just adjust to how much meat you are cooking. Taking a few minutes and prepping ahead will definitely help you throughout the week, I love to make soups...chili...tacos...enchiladas...casseroles...etc. with this meal prep. It's convenient and you'll be surprised at how much you don't waste by prepping your meals. I wish everyone a less-hectic week but in the meantime, I hope you try this time-saving tip. Enjoy!

Here's all you do....my weekly meal prep includes...one pound of ground chicken...cooked with a half of a bell pepper and seasoned with 1 tablespoon of tomato paste and one packet of sodium free chicken bouillon. let cool and divide into two freezer-friendly containers.

Cats Tip of the Day!..." Best friend in the Kitchen"

 Hey everyone...Sunday Blessings to y'all. I hope you're having a great weekend. I wanted to share a quick tip with you. We all know by now I'm "hacking" tips...recipes etc. in the kitchen. I'm all about saving time more than ever with my back issues. I love to make breads, but I will admit that I get a bit frustrated when it's getting brown on the edges but not quite done in the middle. So today I'm going to share a "old tip" with you from my late gram. She was always making homemade bread. Well, I didn't make mine totally from scratch, but it's made in my kitchen so it's homemade...right? :-) O.K....confession...I "hacked" another bread mix that I'll share soon. Anyway, she would use a clean towel and lay it over her bread to let the steam finish the baking when she removed it from the oven. She always did this and said it made the bread moister. I have to admit depending on what I'm baking I do this a lot. The weight of the towel keeps the steam in and usually just a few more minutes your bread is done in the middle. I do a couple more steps when I'm baking. I spray my pan with baking spray...line it with parchment paper for easy "lift out." The parchment paper also comes in handy if it needs more baking on inside. Once I remove from oven...I lay on a trivet...wrap the ends to the middle of parchment paper....lay a paper towel over then I lay a clean towel on top. The paper towel keeps my towel clean if there is any residue on loaf pan from the cooking spray. Also, don't forget the "toothpick" test :-) I'm sure we've all been taught that one :-) I called this tip "best friend in the kitchen" because I think of my gram every time, I use her tips. I'm from a long line of cooking/baking family and it's so sweet to remember their tips. I hope you enjoyed this tip and hope it comes in handy for you as well. Pass it on to your loved ones. Lovin' Fall Blueberry Muffins..."Mix w/a Twist!"

 Hey y'all....hope all is going well. It's been a bit crazy for me but I've come to realize to take life "one day at a time." I'm still going through my Mom-in-law's things after her passing but thankful she told me what she wanted done with her items. Seriously, don't ignore your loved one if they want to "talk" to you about leaving their items. I for one would say "oh stop...you'll outlive me." Needless to say, I'm very thankful for semi-listening. We all know it's going to happen...it's part of life...I just didn't want it especially after the recent passing of my dear dad. I know she's happy know that I donated a lot of her quilting items as she requested. But have to say...I'm still finding stuff. Oh, my goodness :-) In the meantime of all this my health has taken a bit of a "wrong turn." But again...one day at a time. I'm still working on my grandson's cookbook. Tweaking my recipes healthi-r :-) Although due to my back situation I'm having to really shorten my time in the kitchen...which stinks...I'm not going to lie. Well, if you know me, I'm going to try and make the best of it so I've come up with "Mix w/a Twist." Yup...I'm hacking box mixes these days. I always have been proud of baking/cooking from "scratch." My dad was a great cook and taught me many recipes and blessed to have a stepmom the same. Although I recently had a conversation with a friend over the technical term "homemade." Hmmm....we've come to agree that if I made it in my kitchen it's "homemade." :-) Right??? I mean seriously y'all.....who doesn't love a good hack...time-saver in the kitchen. I know talking with my daughter there is never enough time in the day. So today being October first seems to be a great time to start some fall hacks :-) I love fall baking. Fall in general and especially blueberry muffins. but pre-made mixes are now hard for me with my health needs. For me, I have found mixes with whole wheat flour is o.k. in moderation. I've been trying to do totally "gluten free" to help with my swelling. I will say one of my favorite box mixes is from "Betty Crocker." I made this as a child so needless to say it's been around for quite a while :-) So I guess what I'm trying to say is my short time in the kitchen might be beneficial to y'all with your hectic schedules & maybe I can help with less-stress for y'all too. I thank y'all so much for following and I'm looking forward to sharing some "hacks" with y'all. Wish me luck with all my "back therapy"...seriously don't get old...it is a trap :-)

Here's all you need...

* Betty Crocker Wild Blueberry Muffin/Bread Mix

* 2/3 cup water

* 1/3 cup vegetable oil

* 2 eggs

* 3/4 cup "fresh blueberries" rinsed/carefully pat dry

* 1/4 tsp. ground nutmeg

* 1/4 tsp. ground cinnamon

* Pinch of Humor (a must) :-)

Optional topping...

* 1/4 cup of brown sugar

* 1/2 cup chopped walnuts

Here's all you do...

* Prepare Mix as directed on Betty Crocker box but add the following ingredients as stated above. The fresh blueberries...nutmeg...cinnamon & "pinch of humor"....

* Once you have filled your muffin tins as desired then mix the brown sugar and walnuts together and sprinkle on top of each muffin.

* Bake as instructed on box.

Let cool & enjoy!

I have to say it's pretty simple but adding the fresh blueberries brings the recipe to a whole other lever. For me there was never enough blueberries and if you love blueberries like me, you'll definitely appreciate the addition. Plus, the smell is so more intense when baking. 

Tip: 

I have recently been "prepping/freezing" due to my limited time in the kitchen. It's convenient and a great time-saver as well. I let the muffins cool then place in freezer-friendly bags...label and pop out ahead of time in fridge to thaw. I have the convenience of still eating within my dietary needs without buying processed foods that I cannot eat.

Happy Labor Day & sneak peek of some upcoming projects!

 Hey y'all....hope you're having a restful Labor Day. It's a extra special day because it's my grandson birthday too! Today is pretty quiet but I'll take it! "Left-over-Spaghetti? No problem...Cats "Chicken-Apple-Spaghetti"

 Hey y'all...hope all is going great. I don't know about y'all but I always have left-over spaghetti. Until recently that would aggravate me so much! Now...I deliberately make more to use the next day to make my Chicken Apple Spaghetti. I started cooking spaghetti at age of 7 and can't even imagine how much I've waisted throughout the years. Oh my goodness. Well recently I was trying this new "chicken-apple sausage" & it is so d'lish that I incorporate it now in left-over spaghetti and some other recipes too come. The chicken apple sausage is so easy to cook & versatile. It's been a total "game changer" as my sweet grandson would say. At first, I thought how I can reheat spaghetti without it tasting mushy. Yes, I said it...mushy! So I experimented...I "peeled & sliced" the sausage and cooked in non-stick pan in olive oil and "butter" along with mushroom & peppers. Once it was all cook thoroughly, I added some left-over noodles then "chicken stock" just enough to moisten the spaghetti. The stock will make a mild sauce with the chicken apple sausage. Oh my gosh it's d'lish. Right before serving I did put a bit of butter & season with a bit of garlic powder then squeezed a lemon wedge. You can definitely twist this idea to accommodate your family's favorite veggies. I don't think you could go wrong :-) I hope this recipe takes some stress off with what to do with "left-over-spaghetti" :-) Thank you for following & check back soon for more fun recipes this summer! Cats "Healthi-r Strawberry-Mango-Yogurt-Pops!"

 Hey y'all....hope your weekend is off to a great start. It's a bit quiet here. Most of our neighbors have gone back North. We used to laugh in Texas because we lived out in the "woods" and we'd say hey "there goes a car." Now we say, "there goes a golf-cart." Times have changed but hopefully we'll be back in Texas soon! Don't get me wrong...I have nothing against Florida....humidity is horrible for my bones & muscles. It is nice being close to the beach when friends/family visit. I did laugh yesterday because I heard "young voices." Have to say when you live in a "retirement village" that's a treat. It just makes me miss my grandson more. You don't realize how sweet a child's laugh is until your away. A phone call just isn't the same. Maybe I'm getting more sentimental in my young age...ha! Well speaking of kids. I've been testing "healthi-r" pops. I'm obsessed with my new silicone molds. I even made a special spot in my freezer door to hold molds while freezing. One of the "perks" when downsizing was a smaller refrigerator. You don't realize what is so important until you downsize. The silicone molds are wonderful & easy to remove. I just remove once frozen...let stand at room temp.for a minute ...wiggle the stick a bit and push pop up from the bottom. This is a great treat for the kiddos to make but for me it's all about controlling the sugar on my "weight-loss-journey" These are healthi-r and d'lish,,,fun & easy to make. A win...win for me and can't wait to make them with my grandson. I'm sure they will be refreshing for him after sports in the "Texas heat." I did get a 'thumbs up" when I text him the picture. I love how he's helping me on my journey! Remember to tweak for your dietary needs. Well....I hope you enjoy making these and keep following for more fun & easy recipes & projects this summer. Here's all you need...

* Silicone pop mold

* 1- 5.3 oz. Silk dairy-free vanilla yogurt

* 1/2 cup Zero Sugar Mango Passion juice from Minute Maid

* 1 Tb. Organic Agave in the raw

* 1 cup frozen chopped Mango (find in freezer section)

* 1 cup frozen strawberries (find in freezer section)

Here's all you do...

* Let fruit thaw a bit but still in a frozen stage. (this replaces adding ice)

* In blender....add yogurt....juice...agave .and half of the fruit. Blend until creamy. Add the rest of fruit and blend until all incorporated. It will appear "ice"...and you could eat as a "slushy" if desired.

* Fill molds to marked line at top of your mold. Add stick and freeze for about 4 hrs. Depends on size of your mold. 

Tip...this is a great recipe to make the night before with the kiddos especially if your having a "sleep over." :-)

Freezing tip....I wrap each pop in parchment paper and place in a freezer bag. Then take out as desired.

Cats Tip of the Day! "Re-purpose Patio Cushions"

 Hey y'all...hope your weekend is going great! Well Summer is officially here. I can't believe the heat plus already storms brewing like crazy. Too soon mother-nature...slow down! ne of my chores that I absolutely despise is cleaning my patio furniture every summer. Well actually in Florida with the humidity it's a "all year chore." I wanted to replace my cushions, but the price of cushions was super high. Well, if you've been following me you know I've been posting tips on "teach the kiddos 2 Sew." My latest post was using a beach towel and making a pocket for storage. Posts June 3-4th. I thought why not use this same concept and just cover the cushions. My cushions are in great shape just a little faded (see pic). I'm so glad that I did! You can follow my instructions on my quilting blog but you;ll be doing the same technique just on the bottom of beach towel as well. Not only did I save money but I love how the towels just gave my Florida room a fresh look! Follow on my quilting blog for all the tips & techniques to "re-purpose" your patio cushions. Cats "Banana Break-fast Bars!"

 Hey y'all....hope your Friday is off to a great start. I wanted to share this healthy break-fast bar with y'all. I know a lot of y'all have kiddos at home this summer and if you're like me you want them to have a healthy snack. Don't get me wrong you can definitely add some "chocolate chips" into the batter if desired. But I'm calling this my "banana break-fast bar" because it's a fast grab and go bar for those hectic mornings. Plus, I love it cause it's very healthy....all natural ingredients for my "weight loss journey." I will admit...I probably have the worst "sweet tooth." But here's a funny....I love banana bread but you probably won't see me just eating a banana by itself. I have no idea why and found out recently that my Grandson is the same way. He says his 'tongue tingles" so maybe he is allergic but for me it's the texture. He's helping me with making my recipes healthi-r so this one he probably won't try. I'll be seeing him soon so thank God I do have some other recipes for him to try! I love cooking and baking with him. He will definitely tell me the truth :-) This bar recipe is now my new "go to recipe" to have on hand. In fact, after they have cooled, I cut them into bars and place into bags. First, I place them in a "sandwich bag" them place a few into a "freezer bag" That way they are wrapped for on the go plus sandwich bags are cheaper than freezer bags. Every little bit helps...right? :-) Plus, I just keep a few in fridge at a time to keep them fresh :-) I will say that I did not use any flour or eggs. I also started the recipe on stovetop in a large non-stick pan then transferred to a baking dish. This might seem daunting but you're still only using a "pot" instead of a bowl to mix in. Plus whenever possible I love to use nuts, etc. from Nature's Eats. Great quality and they are based out of my love of "Texas Town Boerne". Here's all you need...

* 1 Tb. Coconut Oil
* 1/2 c. Organic Creamy Peanut Butter
* 3 small ripe bananas "smashed"
* 2 Tb. Organic Agave in the Raw
* 3 cups Gluten Free 1 Minute Cooking Oats (add more or less depending on ripeness of bananas)
* 1/2 tsp. organic ground cinnamon
* 1/4 tsp. organic ground nutmeg 
* 1/2 cup each of sliced almonds, sunflower seeds, chopped walnuts & pumpkin seeds.
Note: adjust to your dietary needs.

Here's all you do...

* Preheat oven to 350*

* Prepare a baking dish by spraying with baking spray then line with parchment paper for easy removal.
Set aside.

* Peel and smash your bananas...set aside

Note: these next steps go fast when cooking on stove...so don't walk away :-)

* In a large non-stick pot...melt coconut oil with peanut butter using a heat safe spatula. 

* Stirring until all melted.

* Add agave...seasoning...blend together and remove off heat.

* Quickly add oats.... stirring until combined then fold in nuts until all incorporated.

* Spread evenly in prepared baking dish.

* Bake for about 25-30 minutes. Oven vary. Bars will set up more once cooled.

Enjoy the small...oh my gosh it does smell like banana bread :-)

* Once cooled...cut into bars of your desired size. Package and freeze to fit your family's needs.

"Stock it Up w/ Cuisinart!"

 Hey y'all....hope your week is going great! I love sharing tips with y'all....especially if it's "money-saving-tips!' Last summer I had to purchase some new cooking pans. I was shocked with the pricing. Yes, it's been a while since I did. My Pioneer Woman set lasted over 5 yrs and that was wonderful. I cook a lot and knew it had to be a good investment. I've always loved Cuisinart cookware. Well one day while shopping at "Marshalls" I noticed Cuisinart cookware. Oh my gosh...my feet couldn't get me over to that shelf fast enough! I couldn't believe the savings! Needless to say I purchased the "braiser" and the "5.5 Stock Pot" as well. You do have to check with them periodically cause they do sell fast. Well, these are my go to pots and I use them so much that I just keep them on top of my stove. Ya know...Cuisinart decor! :-) I use the stock pot so much especially when I'm making Chicken broth. Due to my "dietary needs" & weight loss journey" buying a cooked rotisserie chicken has become my weekly staple in the kitchen. I love to "d-bone" it right away...easier when warm, & divide for recipes for the week, I freeze in freezer-friendly bags and thaw in fridge before using. This is so convenient and great tip if you're cooking for a small crowd or the only one that needs to shed a few pounds. Ugh! You can season your water if you wish but I just throw the old bird in the pot...cover it with water and once it's come to a boil, I then let it simmer on low for about 30 minutes. I buy the one that's already seasoned. I love this...the cooking is already done for me & I'm saving money buy making my own stock. I carefully strain it into a glass measuring bowl then once cooled I then pour into my canning jar and store in fridge. It's ready for when I add to recipes especially in my Spanish rice & Chicken soup.  You can't beat the natural flavors of chicken stock. What a fun way too if cooking w/the kiddos this summer. Healthy cooking and saving money. Well, I hope you give this a try if you're not already doing so & wish me luck on my weight-loss-journey! Grandson Davin is helping me and keeping me focused! Love it!

"Harvest Cilantro"

 Hey everyone....hope your week is going well. I've recently started "container gardening." This is very new to me, I always had a garden spot that I truly enjoyed. Well with "temporary downsizing" comes changes in all aspects of life and gardening was one of them. I've realized they do take a bit more care when growing herbs and veggies in pots. The plus is I can enjoy my container garden while having my morning cup of coffee. You should try it...very relaxing :-) I still love a great farmer's market on Saturday! Always a great back-up & supporting the locals. Well, I've recently had some "cilantro" that I needed to pick and I didn't want to waste a bit. I love to freeze cilantro, but I thought why not make cilantro water and just pop out and thaw when needed. So I did! It's a bit of double duty. If you love cilantro, then you will definitely appreciate the aroma of cilantro when boiling. Win win in my book! Well keep following for more great tips this summer. I hope you have a chance to teach a child to cook this summer. I love when I'm able to be in the kitchen with my grandson. Memories that will last forever! Enjoy!

Here's all you do...

* Carefully rinse your cilantro if needed

* Boil cilantro in about 3-4 cups of water. Depending on the amount of cilantro & strength you prefer use less or more water.

* Boil for about 10-15 minutes then carefully strain over a glass bowl ( I use a Pyrex for easy pour)


* Let cool for a few minutes.

* Pour into ice cube trays and freeze


* Once frozen place in "freezer friendly bags"

Tip....I measured my ice cube trays with plain water to know the exact amount each cube would be.

Example....2 of my cubes = 1/4 cup of water.

This comes in handy when adding to a recipe exact liquid measurements.

Note: measure your ice cube tray....I've learned not all are the same :-)

Tip: I love to use "cilantro water" when making my Spanish rice.

Hello Summer!..."Teach the kiddos 2 sew this summer"...Fun beach towel tutorial!

 Hey everyone...hope your summer is off to a great start. I "remember" the days of trying to come up with fun activities for my daughter. Oh my gosh...seems like yesterday! Now as a "Gege" I love seeing her creative ideas for my Grandson. I always planned a indoor activity due to never knowing how the weather would be in Texas. This fun & easy tutorial will definitely teach a child the basics of sewing plus I'm sure they will love showing off their "unique" towel by the pool. Phase 1 is on my quilt blog for the basic technique of making a "fold" to secure your towel to a chair or lounger. But I encourage you to check back for Phase 2 of a advanced technique of a "scrappy duo pockets." Yes....you'll be using your scraps...fun & easy sewing techniques & pockets to store your summer gadgets. I used 50 weight Aurifil thread for strength & scraps from Northcott (Banyan Batiks & glam by Patrick Lose). If you need supplies pop on over to Missouri quilt co. Happy Memorial Day! ..."Bake/Cook Memories Forward!"

 Hey everyone....hope all is going great this Memorial Day! This was one of my dear dads favorite Holiday's. Growing up "Military", we all were taught to respect...honor and always be grateful to all those that served and are serving our Country. I know he's proud today in heaven seeing the wonderful ceremony at the Dallas memorial. My dad was also a great Chef. He taught me so many things...techniques in the kitchen but the one thing I regret most is not having his recipes written down. As we all know I've been working on my grandson's cookbook and I'm so thankful that he asked me to do this for him. Sometimes you don't realize how special a recipe is until a loved one passes, and you come across their "handwritten notes" in a cookbook or especially on a recipe card. I've also recently lost my Mom-in-law and inherited her recipe books. It's heart-warming when you see there "handwritten notes." I'm so thankful my grandson asked me to write the recipes...he said it would be more special. Wow. How sweet at such a young age to already have those thoughts. I have to totally agree. The pic below is just a few of her recipe books and special recipe notes that I've recently come across. I'm going to make some of her recipes that she must have liked by her little notes but hopefully make them a bit healthi-r ;-) I've truly enjoyed reading the cookbooks but sometimes have to laugh at all the ingredients that were used. It was definitely a time where a "stick of butter" was the "main ingredient." Ahh those were the days as they say! Cats "Left-over Lovin' Quiche" 4 Mom!

 Hey y'all....hope your weekend is going well. It's Mother's Day weekend and for some of us our mothers are in heaven. I truly believe to celebrate their legacy by carrying on with their favorite dishes. We recently lost our "mom-in-law" and she loved it when I baked a quiche. Recently her son purchased "peppered turkey" by Boars-head and shared left-overs with us all. Oh my goodness...this Turley is perfect for my layered quiche. My recipe has a "no fail ingredient" that I was taught by my late dad. When dad retired, he became a chef so needless to say this recipe is extra special. This weekend we all love to cater to our moms...friends...loved ones but don't be afraid to use those leftovers. Trust me in this quiche nobody will know! I usually use ham with this recipe but I think my new love is the "Peppered Turkey" by Boars Head. Whatever you do this weekend take time for yourself. If you're like me and your family is miles away, then cherish the memories.... practice recipes so the next time you're all 2gether it will be perfect! Enjoy!

Here's all you need...

* One Pillsbury pie crust (thawed)

* 8 slices of "Peppered Turkey slices" by Boars Head ( 5 slices for crust-dice 3 for egg mixture)

* 4 extra-large eggs (Egg-lands Best)

* 1/4 cup light sour creme (shhhh...secret ingredient) helps quiche set up perfectly!

* 1/4 cup creme or low-fat milk

* 1/4 cup sharp grated cheese (finely shredded)

* 1/4 cup Italian style grated cheese (finely shredded)

* 1 Tb. mild hot sauce ( I love Taco Bell)

* 2 small, sweet peppers (red/green) for color diced

* 6-7 cherry tomatoes (cut in half) serrated knife works great

* 1 tsp (garlic powder)

* 1 tsp (white pepper)

Or season as desired.

Here's all you do...

Pre-heat oven to 425"

* Prepare pie crust in baking dish as desired ( I love Baker's joy cooking spray) ...

* Pinch around the edges (it has to look pretty) :-)

* using fork...poke a few holes on bottom of crust & sides

 ( I do this because of layering the turkey on crust)

* In large bowl whisk 2gether all ingredients except 5 turkey slices, tomatoes & peppers

* Layer pie crust as follows...

* Lay 5 turkey slices on top of pie crust with the "peppered edges" to the top


* Spread evenly your tomatoes and peppers

Tip: this is when I place my baking dish on a baking tray for easy/ safe access to the oven (trust me)

* Fill with your egg mixture


* Cover pie crust edges with aluminum foil or a pie crust shield 

Bake 30-35 minutes or until egg is cooked thoroughly (ovens vary)

Let cook as it will continue to set up!

Serve alongside a fruit salad or whatever your family desires!

Cats "Texas Style Deviled Eggs"

 Hey everyone...hope y'all are having a great Saturday. I wanted to share my "Texas Style Deviled Eggs" with you in leu of "Cinco de' Mayo", weekend. Well for this Texas gal it's any weekend. I don't need to have a reason to make these yummy, deviled eggs They are a "staple" in my family during the Holiday's but would make a great dish for picknicks...potlucks etc. I do call them "Texas Deviled Eggs" due to the pickled jalapenos. I love pickled jalapenos...they are not as spicey and if you'd like you can just add some of the juice for a mild heat flavor. My grandson loves it when we make devilled eggs together. He loves these in the morning due to the ingredients they are kind of a "breakfast taco" without the tortilla. :-) Substitute any or the ingredients to your families' desires. Enjoy!

Here's all you need...

(For a dozen deviled eggs)

* 6 eggs boiled and peeled  (let cool)

* Cut eggs in half and remove yoke. Set halved eggs in platter.

* In a medium bowl...add following to yokes.

* 1/4 cup ranch dressing ( I use lite)

* 1/4 c grated cheddar cheese

* 14 c. Bacon Bits ;-)

* 1 Tb. mustard

* 1 tsp. white pepper

* 2 Tb. pickle relish

* 2 Tb. pickled jalapenos (or to taste)

Here's all you do...

* Mix the above ingredients until smooth. ( I use a potato smasher)

* Fill your egg halves as desired. 

Garnish with more bacon bits on top. You can't go wrong with this step! :-)

Tip....if you'd like your filling a bit creamier just add in some pickle juice.

Refrigerate until ready to serve.

Tip...I place a few toothpicks at random before covering with saran wrap. Keeps the plastic from sticking to the eggs.

 Hey everyone...hope all is going well. If y'all are like me you're always wanting a fun & easy way to serve dinner. I love to make trivets. Not only are they functional but a great conversation starter. When you entertain & place a "homemade" trivet on the table it just feels like home. They also make great gifts for any occasion. I also love the convenience of "stove to table". Honestly any night of the week. I recently purchased the 3 qt. stainless steel round braiser by Cuisinart. Oh my goodness. I love the quality...the convenience and how you can serve straight to the table. It's definitely a "showstopper" on top of my Trivet that I recently made. "Rabbit in a hole" for Easter Breakfast!

 Hey y'all...hope your Easter weekend is going great. I wanted to share a fun Easter breakfast that you can get the kiddos involved as well. It's a twist on the old "Classic Egg in a hole." Oh my gosh....I grew up with "egg on toast" it wa something easy & inexpensive but then came along the "egg in a hole." Well that did it for me! We are always coming up with fun breakfast ideas when family gets together. This fun & easy tip just involves a "cookie cutter" which you probably already have. What's fun is the tips of the Easter Bunnies ears start turning white as it cooks. :-) It's a tradition we do almost every Holiday using seasonal cookie cutters. The kiddos love helping. And you just made Easter Memories they can share one day too. To this day my grandson Davin always requests "Cinnamon Toast" made with Christmas Cookie Cutters. I can honestly say that he will definitely continue these special moments that I have with him with his family one day. I hope you try this tip if you aren't already doing so...make those special memories with your loved ones even if it's so simple as an egg....slice of bread & a cookie cutter. :-) Easter Blessings!

Here's all you do...

Cut your hole in bread using Bunny Cookie Cutter or your desired cookie cutter.

Tip: I place bread on cutting board to make the cut out easier. :-)

In a non-stick pan. on med low. Melt a Tb. butter & place toast in pan and carefully crack the egg into the hole.

Depending on how you like your eggs...cook as desired. I love how the "ears" start becoming white as 

the egg cooks. So cute! Have fun with the kiddos or adults :-)

"Cats Easy Easter Beef Stew"

 Hey y'all.... hope your week is going great. I know this is a bit "cliche" but it does seem like yesterday we were celebrating Christmas & now it's Easter weekend. This year it will be a quiet one, so I love to still have a nice brunch but a bit less hectic. The recipe that I'm sharing with you is a "twist on an Ol classic." We all know the "pot-roast".... everything cooked together which I do love. Well recently I started taking my pot-roast recipe and serving it over "mashed potatoes." Yup, I leave the potatoes out! I will admit that sometimes I get in a rut and cook the same thing over so this was nice to have a change. Not only is it delish when the juice of the stew is poured over the mashed potatoes, but it seems more attractive when plating. When you serve this dish be prepared for everyone to think you spent hours preparing but you didn't. It's also a great recipe to make ahead and serve left-overs for those hectic weeknight dinners. I also want to share this "budget friendly tip." When I purchase "beef for stew" it's rather chunky. So I love to take those chunky pieces of meat and cut them into smaller pieces. Not only does this help with the meat to be more tender when cooking but you just stretched your dollar as well.  I'm all about less-stress in the kitchen and I hope you enjoy this recipe as well. Here's all you need...

* 1 lb. Beef for Stew

* 1 pkg. Lipton Onion "Recipe Soup Mix"

* 2 cups Less Sodium chicken broth

* 1 120z. pkg. mini carrots (already peeled) :-)

* 4-6 medium potatoes (peeled & cubed)

* 1/2 cup diced bell pepper

Here's all you do...

* In a large stew pot slightly brown meat in one Tb. olive oil & I Tb. butter until tender

Tip....I add the diced bell pepper to the meat while cooking to add flavor.

* Mix onion soup mix w/ chicken broth and add to meat.

* Add carrots and cook over med heat for about 15-20 minutes...stirring occasionally.

* Reduce heat and simmer on low until tender.

Tip...You can add water or more chicken broth as needed while it's simmering


Before serving thicken broth with! Tb. cornstarch if desired. ( I will remove some broth from stew and whisk in the cornstarch them add back into stew. This will prevent clumps :-)

Mashed potatoes...

* Boil cubed potatoes until tender. Carefully drain and add 4 Tb. butter & 14 cup low-fat milk. Using a "potato smasher" smash all together until smooth. Kids love to do this step :-) Season as desired.

Tip....I season my water with 1 Tb. garlic powder then add diced potatoes. You get a mild garlic flavor to potatoes whisk I love. 

Serve beef stew over potatoes. Garnish as desired.

This recipe easily doubles for a crowd and you can cook in a crock pot too!

Cats "Easy Enchilada Casserole"

 Hey y'all.... Hope you're having a great weekend. I know Sunday blessings are wonderful but for some reason instead of enjoying today I start thinking of the week ahead. I'm getting better as I get older to "try" and enjoy the moment. Tomorrow will come but make today as memorable as possible. We recently lost our Mom-in-law. She was very dear to us and will be very missed. When a loved one passes it really hits home to cherish everyday.... every moment. I wanted to share a recipe that my grandson loves. It's so easy especially if you have a hectic week ahead with kiddos activities. This is a no-fuss recipe. I cut the corn tortillas in half and layer in casserole dish. You can totally roll the tortillas, but layering is so easy. Freezer friendly, make ahead and freeze in a "freezer-friendly-container." I even did a spin on my Spanish rice to save time as well. Oh did I mention...this is also using the other "half" of my "shredded chicken tip" on previous post. :-) These easy recipes that I've been sharing are so dear to me. My grandson Davin had a "list" that he wanted in his cookbook, so I hope you enjoy!

Here's all you need...

* about 10 corn tortillas (varies depending on casserole pan size) Cut in half.

* 1 1/2-2 cups of shredded chicken (see previous tip)

* 1-10oz. can of Old El Paso red enchilada sauce ( I use mild)

* 1-16oz. can of Bush's Chili & Beans (pinto beans-mild) do not drain...great flavor :-)

* 1 cup Pace Avocado Salsa (mild)

* 1-cup shredded Colby-Jack cheese

* 5 oz. Queso Fresco (crumble for topping)

* pkg. Knorr Mexican rice (recipe below)

Here's all you do...

* Pre-heat oven to 375*

* Spray your casserole dish w/cooking spray (easy clean-up)

* Spread enchilada sauce on bottom of pan....(just enough to cover bottom of pan.)

* Cut tortillas in half ( I do about 5 at a time so I don't waste any...you can always make chips later :-)

Layer as follows...

* Layer cut tortillas in pan as desired (I go up sides then down the middle)

* 1/2 of shredded chicken

* !/2 of chili beans

* 1/2 of Colby Jack cheese

* Drizzle 1/2 of Enchilada sauce on top

* then a layer of 1/2 c. Avocado salsa.

Repeat Layers as above.

* Top w/ crumbled Queso Fresco

That's it :-) Cover with aluminum foil and bake for about 30 minutes (ovens vary)

Uncover and bake an additional 15 minutes or until casserole is heated thoroughly.

Tip...I place my casserole dish on a "baking dish" to remove in/out of the oven :-)


Tip...when I "uncover" the casserole to bake for an additional 15 minutes that's when I start the Spanish rice. 

I make the Knorr Spanish rice as directed on package, but I substitute the water with low-sodium Chicken broth & half of a bell pepper chopped finely...2 TB. tomato paste and some chopped cilantro.

You can make your rice from "scratch" but this is a great time-saving tip.

"Cats Creamy Chicken Noodle Soup"

 Hey y'all....hope you're having a great weekend. I shared on a previous post "Eating for 2 is easy 2do w/Purdue" & here is one of my recipes after baking the chicken breasts. I'm all about time-saving recipes these days & this one is easy and d'lish. I make this recipe all year but with this crazy weather lately I'm sure a warm bowl of soup just might be nice. It's definitely freezer friendly if needed or easily doubles for a crowd. I know my grandson is excited to have this one in his "cookbook."  I still get tears when I think of him going off to college. But he's already 12 so time does fly by to fast! Well...I made this in a "stock pot" and did let the soup simmer for a while before adding the noodles. Sometimes I just enjoy the smell of something cooking. It's a vary "hearty" recipe & I usually just serve with Ritz crackers  but adjust the recipe to your family's needs. Check back soon for my easy chicken casserole...again using my time-saving technique with Purdue chicken breasts. Enjoy!

Here's all you need...

* 2 large chicken breasts ( cooked & shredded.)

* 1 can 10.5 Campbells cream of chicken soup

* 1 can 10oz. of Campbells cream of celery soup

*2 cups low-sodium chicken broth

* 1 can 15 oz. Del Monte Southwest corn w. Poblano & Red Peppers (do not drain)

* Pinch of dry crushed red peppers (opt but d'lish)

* 1/2 tsp. of garlic & onion powder

* 1 1/2 cups of wide egg noodles

Here's all you do...

* In a large stockpot...combine soup with 2 cups chicken broth...whisk until combined.

* Stir in southwest corn & crushed red peppers & garlic and onion powder or season as desired.

* Add in shredded  chicken and cook over medium heat for about 15-20 minutes.

* Using one of your soup cans add about a cup of water to soup before adding noodles. This will help

 when noodles cook due to they absorb liquid

* Add in the noodles & cook until combined and noodles are tender.

Tip....add more broth or water as soup simmers if needed. Soup will thicken as it simmers.

Serves 2-4...if you freeze leftovers just make sure it cools down before freezing in a freezer friendly container. Don't forget to label & date...don't ask how I know :-)
