"Cat's Texas Hash-Cakes"

 Hey everyone...hope your Friday is off to a great start. As promised....I'm sharing my "Texas Hash-Cakes." They had to be grand-son approved and needless to say I've only been here 2 weeks and they are already a "request" every morning from grand-son Davin. There is nothing that brings me more joy then to hear "Gege can you make your hash-cakes?" Maybe they should be called "Gege's Texas Hash-Cakes" :-) I was hesitant to share this recipe 'cause it's so easy but they are d'lish. You can change it up by using your favorite pancake mix....healthy side make with wheat or whatever you desire. Get creative....add cooked crumbled sausage or bacon crumbles to the hashbrowns then add your pancake mix on top. Hate to admit...may not ever eat a regular pancake again :-)  Endless possibilites with this recipe. I'll be testing some "additions" myself :-) Enjoy!

Here's all you need...

Pancake mix ( I love Aunt Jemina Pancake mix....don't judge :-) I add vanilla & cinnamon 2 mix.

Hash Browns ( thawed)

Optional....cooked sausage....bacon....endless possibilities!

Here's all you do...

Mix pancake mix to your desired preference.....Heat a non-stick skillet and cook hash browns to your preference. Me it's all about the "crunch" 

Remove from skillet. Scoup about a 1/4 cup back into the pan & top with pancake mix covering well. 

Remember...this is "no-fuss-cooking" the more "rustic looking" the better :-)

Brown...Flip...Remove...Repeat....Eat...You're Welcome! ;-)

Tip....add cooked/crumbled sausage or bacon to the hashbrowns then top with your pancake mix.

W.A.S. "Walk...Arms...Stomach"

 Hey everyone...hope your week is going well. I wanted to share this inspiration/tip with you. I've recently had a health scare & now need to make "changes" due to this. I know we all go through changes as we get older but it's how we "adapt" to them, which makes all the difference. As I'm slowly learning :-) I needed a reminder....needed to be disciplined...although my daughter keeps me motivated. Also, with age comes a very different form of eating & exercising. I alway's say..."it stinks getting old." 

Anyway, I started W.A.S..."Walk...Arms...Stomach" on my Pinterest page to hopefully help someone else that might be having some health changes as well. The Pinterest board features safe exercising tips....healthy recipes,,,and motivational quotes. I also started 2 month's ago giving up one "bad food habit." The first one was a shocker for me but doctor's orders of giving up BACON. Oh my goodness, I seriously thought she was joking. My current "challenge" is no chips. I really didn't eat a lot of chips but I do like a "crunch" with my food so now I replace with cucumber slices or carrotts. :-) I feel every small change will make a big difference later. #onestep@atime!

"Cooking Schedule of the Week"

 Hey everyone....hope y'all had a great weekend. I'm enjoy being with my family & spending time with my grandson but where did the weekend go??? Seems like we just was wondering what to eat for dinner Friday night. Time does "fly too fast" & one thing I've learned in life is to "make every moment count." Well, except calories...wouldn't that be nice :-) I do have some easy...healthi-r recipes to post this week,,,,I'm trying them out on my "grandson"....he's my "tester." In the meantime here's some 'cooking humor" to start off the week. Somehow I'm going to print this and place on fridge for some ER days. Although I'll have to state "Gege's Kitchen" :-)

"Cat's Rustic Chicken Pot Pie"

 Hey everyone....hope y'all are having a great week. Mine has been pretty amazing. I'm with my daughter's family and spending time with my grandson. It's sweet watching them grow up but it also kills me. I've gone from "Gege" to "G'g". I'm not even sure how to spell it but that's what I'm called....well...right now anyway. He's even made "me" breakfast a few times already. Now that I was totally fine with :-) Being a "Gege" has been one of the greatest joys in my life and I cherish every moment when possible. 

I wanted to share this chicken pot pie with y'all. It's a family staple and mostly because it's super easy to do. It  does have a few calories in the recipe but I'm sure you can replace some ingredients to your needs. Don't let the "latice" intimidate you....I do this technique but if you know me it's super easy. All you do is take your fingers and "pinch" the strips throughout once you have finished weaving the pie strips. I do this because I for one never get my strips even when slicing. I do use a "pizza cutter" which does help. This technique is perfect for any pies. Trust me...you'll get lots of compliments & nobody needs to know how easy it was...except us! This is also a great recipe to feed a crowd....take to functions & freezes well. Enjoy!

Here's all you need...
1 Box of Pillsbury Pie Crust -thawed (don't judge) :-)
1 can cream of celery soup or cream of chicken ( I use low sodium)
1/2 cup of milk ( I use low fat)
1/2 cup of Low Sodium Chicken broth
1 1/2 -2 cups of Cooked Shredded Chicken ( I bought already shredded in Deli...remember it's easy!)
1 cup of your favorite veggies....( I keep it simple....frozen corn...peas & green beans)
1/4 cup shredded mozzarella cheese
1/4 cup Italian Style Bread Crumbs
1-2 Tb. of Worcestershire Sauce
1 egg ( for egg wash on crust)
Coarse Salt (optional for crust)
Salt & Pepper to taste or your favorite seasonings

Here's all you do....
Preheat oven to 375*
Line a baking sheet with aluminium foil (catch any drippage)
Lightly spray a "spring form pan (this is why pie is so thick :-)
Place one thawed pie crust on botton of pan and smooth up the edges.
Pinch bottom with fork a few times
Sprinkle bottom with bread crumbs
Whisk together soup....milk....broth....add shredded chicken & veggies....blend well & pour into pan.
Sprinkle with cheese & more bread crumbs if desired
Now...cut your pie crust into strips & do the latice design on top...crimping edges together. Remember no worries...go back & pinch at every other section....so easy & remember it's a rustic pie :-)
Make egg wash (egg mixed with a bit of water) & lightly brush over pie crust strips.
Sprinkle with coarse salt if desired.
TIP...lay a pie crust shield over crust to prevent burning. If you don;t have one just cut some strips of aluminium foil and wrap the edges.
Bake on cookie sheet for about 30 minutes then lower oven temp to 350* for about another 15-20 minutes (ovens vary so check during this process)
Remove from oven a let cool a bit to set up.
Slice with a sharp knife and serve with a cake/pie server.
Serve along side a side salad or do a "throw back" in time & serve with applesauce. 
Note....if you do freeze pie...wrap completely in foil & let thaw in fridge before cooking. Remove foil & wrap the edges as above before cooking.

"Space-Saving Coastal Decor"

 Hey everyone...hope your week is off to a great start. Recently due to "down-sizing" I had to come up with a semi-clever idea for decor. I purchased a sign last fall but wanted to have a sign for all seasons. I would be using it and no need to store it due to my limited space. The back of the sign was a "empty canvas" for me so I purchased letters from local craft store and painted them a pretty coastal blue. I did rough the letter's first with sand paper before painting. I used a shell intead of the letter "O" and painted the bars white to help define the space. This was such a fun and easy project plus inexpensive. The letters were on sale and paint too. The only expensive was the polyurithane to protect the wood but that's something you can use for further projects. The grapevine wreath was an experiment with same paint and just glueing some shells on it but it worked. Simple but cute. I'm doing things in moderation due to a limited budget but that just makes me think a little out of the box :-) Enjoy!

"My Recipes are Short and Sweet"

 Hey everyone...hope all is well. I recently recieved an email stating my recipes are short and sweet. Honestly, that's a huge compliment. I for one will look at a recipe and pass if it has tons of ingredients. Not that I'm lazy just prefer less complicated cooking. The "cooking humor" below totally sums me up :-) Have a great week!
