Cats Christmas Craves..."Classic Breakfast Wreath" & "Spiced Pecans 4 Santa"

 Hey y'all...Happy Christmas Eve! I can't believe Christmas is tomorrow. I love this time of year...the prepping for a fun dinner with the family & friends. But with every year we try to keep a "tradition" in the family of pancakes for breakfast on Christmas morning before opening gifts together. I always love to make the classic breakfast wreath using the Pillsbury rolls (pic below & recipe on 12-21-24 post) & leave Santa the spiced pecans (recipe on 12-24-24) but this year my daughter is going to surprise everyone with "Grinch pancakes." Christmas morning. I'm sure you've seen that cute Grinch skillet that was in stores. It looks easy as long as the "Grinch" doesn't stick to the cast iron skillet. I love traditions for my grandson to carry on one day with his family. If you've been following me on my quilt blog you can see that we love the Grinch in our family. I made Grinch bags that are 100% re-gift-able that I like to say. They are adorable...repurposed from napkins. It will be a fun year together filled with "Quilt-Mas Cheer all Year!" I can't help myself....sewing Christmas projects brings me Joy. Cats Christmas Craves!..."Peanut Butter Cookies 4 Santa"

Hey y'all...hope you had a great weekend. This is my favorite time of year. I love making gifts...baking and sharing with family and friends. I really pushed myself this year to not leave things to the last minute. I've been testing some of my recipes during the year...making a bit healthy-r and these peanut butter cookies have been a hit. Honestly, they are great anytime of year. They are super fast with no flour and easy recipe to get the kiddos involved. We all need to bake cookies for Santa :-) He'll definately love the lighter side of these cookies. I've been trying to cut back on sugar but we all know recipes can be a bit tricky. So I played with "Vanilla Bean Paste" in this recipe. Yes it's a bit pricey but for me it really gave the flavor the cookies needed when cutting back on sugar. But be ready for your family to gobble them up quickly. I also tested to see if they were 'freezer friendly." Lets just say....they were frozen for only 3 days and that's as far as we got in our home :-) Well, I hope you enjoy making these cookies and don't forget to leave a note for Santa saying they are flourless...I'm sure he'll enjoy that :-)

Cats Favorite Peanut Butter Cookies...


Here's all you need...

* 1 cup creamy peanut butter

* 1/2 cup sugar

* 1 egg

* 1 tsp. vanilla bean paste

* pinch of salt (optional)

Here's all you do...

* Preheat oven to 350*

* Line a baking sheet with parchment paper...set aside.

* Mix all ingredients in a large bowl...cover and refridgerate for about 30 minutes. This step is optional but I like how the cookie dough scoops better when a bit chilled.

* Scoop into balls and place on cookie sheet about 2" apart.

* Spray a fork with cooking spray and do the "traditional" criss cross design on cookie.

* Bake for about 9-12 minutes (ovens vary so check towards the end)

* Remove from baking sheet...sprinkle salt if desired and let cool in pan for about 5 minutes then transfer to wire rack to cool completely. on wire rack.

Makes about a dozen.
