Handmade-Home Cooked w/ Love..."Spooktacular Cookie Crust Chocolate Pie"

 Hey y'all...can you believe Halloween is right around the corner. Seems like yesterday "Skully" was making his Spooktacular trivet over on my quilting blog. Well, we've been busy perfecting my Chocolate pie recipe to share with y'all. I've been making this recipe for many years, and it's never let me down. Super easy especially when needed a great dish for hosting or taking to an event. I wanted to challenge myself and step up my pie crust game so to speak so I combined two of my fav's. In my house you can't go wrong with a chocolate chip cookie recipe. I'm sure with y'all too. So, me and Skully decided to make the pie crust out of cookie dough. Yes, we did :-) Needless to say it put this chocolate pie over the top. I will admit making the cookie crust pie crust takes a few steps but trust me it's well worth it. I did use a frozen cookie dough to save time and it worked out great. I love how versatile this recipe is for any occasion. As you can see in pic below, we used the trivet for the Halloween setting for the pie. You still have time to make your trivet. The design is posted on September 12 on my quilting blog and the stunning fabric that Skully used was from White Owl Textiles/Lumin Fabrics. I'm all about giving that personal touch when it comes to entertaining, a handmade trivet showcasing a home cooked recipe. I hope this chocolate pie recipe becomes a staple in your home for all your Holiday entertaining. Thank y'all so much for following & check back soon for more great recipes & home decor for easy entertaining. Enjoy!

Spooktacular Cookie Crust Chocolate Pie...

Here's all you need...

* one pkg. 16 oz. Pillsbury Chocolate Chip frozen cookie dough (thawed)

* one box Jello Family size chocolate instant pudding and pie filling.

* 1 1/2 c milk

* one cup cool whip

Tip...I love my Pyrex 9,5 clear glass baking dish. Has beautiful, fluted edges which also makes handling great in/out of oven.

Here's all you do...

* Butter bottom/sides of baking dish and line bottom only with parchment paper.

Tip...I lay my dish on the parchment paper then trace around with pencil and cut just inside line. Easy!

* Place frozen cookie dough on parchment paper until it thaws.

Preheat oven to 350*

* Once completely thawed...using a spoon (use cooking spray on back of spoon so dough doesn't stick) evenly spread cookie dough on bottom and up sides of baking dish.

Bake for about 15-18 minutes (ovens vary) check to see how it's baking and carefully remove to spread evenly again if needed. Cookie dough does rise while baking so doing this step helps keep the form of the pie crust feel.

Keep checking cookie dough to make sure it has completely baked. It will set up once cooled.

Tip...I did a once more fluted edge with spoon when it finished baking:-)

Let completely cool before next step!

* Mix pudding w/ milk using a wire risk...it will be thick.

* Spread 3/4 pudding on top of cookie crust.

* Refrigerate until set.

* Mix remaining pudding with cool whip and spread over chocolate pudding.

* Chill about 4-6 hours or until complete set.

Drizzle chocolate syrup over a slice just before serving and or decorate with Halloween sprinkles.

Enjoy!

Handmade-Home Cooked w/ Love..."Berry-nice Cobbler"

 Hey y'all...hope everyone's week is off to a great start. I'm thrilled to share this new series with y'all "Handmade-Home Cooked w/ Love." I'm sharing two of my favorite passions, sewing and baking. As y'all know I love to design quilts and home decor plus cooking and baking. Recently I've decided to do what brings me joy and share with you as well. I've always loved to sew and design my own home decor and gifts. Plus, I absolutely love to bake and share recipes with my family and friends. So, for me it was the obvious choice to combine my favorites and share as a series with y'aIl. I'll be sharing recipes and home decor items for entertaining. Simple yet d'lish recipes and sewing/quilting designs for the beginner along with advanced techniques. My first recipe was inspired by my recent participation in the "Songbird" blog hop with curlicue creations new fabric "Songbird" designed for her by Jerry Khiev of Lumin fabrics. The whole time sewing with this collection the color hues and prints inspired me to make a trivet for entertaining along with this 'Berry nice cobbler." I love a cobbler recipe. Most of the time it's a fast go to recipe for functions or a simple recipe for entertaining. But...I love a pie crust. So, I decided to combine my fav's again and the "Berry nice cobbler" is now a staple in my home. What's great is you can keep most of the items either in your pantry or freezer for easy convenience. The recipe is below and the "Songbird Trivet 4 Entertaining." is on my quilting blog (link upper right on home page.) Again, the sewing steps are super easy along with tips on easy strip cutting to make the "lattice strips." Same technique as your traditional weaving of a pie crust. My trivet fished out to roughly 11x7 to accommodate my oblong casserole dish. The Holidays are approaching fast & this is the first of this series so keep checking back for more fun recipes and designs to ease your Holiday entertaining. Enjoy!

Berry-nice Cobbler...

Here's all you need...

* One bag of Berry Medley frozen fruit (thawed about 2 cups)

* 1/4 th cup of sugar.

* 1 pkg, Pillsbury pie crust (thawed)

* 1 box Betty Crocker Super Moist Vanilla cake mix (only use 1/2 of bag)

* one egg

* 1/2 cup water

* Pinch of humor... (don't forget this...comes in handy when doing the lattice strips) as you can see in pic...sometimes the lattice is perfect then other times you just need to laugh :-)

Here's all you do...

* Prepare your casserole dish as desired (I spray mine and use parchment paper)

* Combine the fruit and sugar in bowl and let them macerate for about 20 minutes. Sugar brings the sweetness out of the fruit for that extra homemade touch.

Preheat oven to 375*

* Combine the cake mix...egg and water...blend well by hand.

* Spread batter evenly on bottom of casserole dish.

* Top evenly with berry mixture.

* Cut lattice strips from pie crust and place as desired and place on top of cobbler.

* Sprinkle with sugar if desired.

Tip...place casserole dish on baking tray to catch any seepage.

* Bake for about 20 minutes then tent with a piece of foil and continue baking for about 15-20 minutes until the cake looks done. The cake will have a bubbly appearance due to the fruit mixture but most importantly check for the cake batter to be cooked throughly. Ovens vary so check and bake as needed.

Cool and serve with whip creme or ice cream is also a favorite.

Enjoy and talk soon,

Cat
