 Hey y'all...hope your summer is going great. It's been a bit of a whirl-a-wind for me. I recently came back from my sew-cation at my daughters. Oh, did we have fun sewing and creating a whole new series of products to share on her Etsy page. She designed wellness products.... Journals...gifts and more. We've been sewing together for many years and I'm so excited to share this new journey with y'all. There is a direct link on my home page. Cats "Mystery Scrap-a-long" begins!

 Hey ya'll....hope you had a great weekend. I wanted to share with you that I'm hosting a Mystery Scrap-a-long over on my quilting blog. It's a great way to use up those scraps and make something special for this summer. I love to have a project in April that I can do when the weather is still crazy. I'll be sharing Hints...Tips & Clues along the way and today's post is full of them. Well..can't give too many hints...it's a Mystery after all :-) Trust me...you'll have fun & I'll be sharing techniques from beginner to advanced too. This is also a great stress reliever. I believe in thread and fabric therapy. Helps me get through the tough times...focusing on making a project to bring joy to someone. As you know...I love cooking and sewing and this month I'll be featuring both. April is "National Stress Awareness Month" so I hope this "Mystery Scrap-a-long" brings you joy. Cats Christmas Craves..."Classic Breakfast Wreath" & "Spiced Pecans 4 Santa"

 Hey y'all...Happy Christmas Eve! I can't believe Christmas is tomorrow. I love this time of year...the prepping for a fun dinner with the family & friends. But with every year we try to keep a "tradition" in the family of pancakes for breakfast on Christmas morning before opening gifts together. I always love to make the classic breakfast wreath using the Pillsbury rolls (pic below & recipe on 12-21-24 post) & leave Santa the spiced pecans (recipe on 12-24-24) but this year my daughter is going to surprise everyone with "Grinch pancakes." Christmas morning. I'm sure you've seen that cute Grinch skillet that was in stores. It looks easy as long as the "Grinch" doesn't stick to the cast iron skillet. I love traditions for my grandson to carry on one day with his family. If you've been following me on my quilt blog you can see that we love the Grinch in our family. I made Grinch bags that are 100% re-gift-able that I like to say. They are adorable...repurposed from napkins. Pop on over to my blog to see them and maybe get a head start on next years Christmas ideas too. I'll be featuring more fun & easy projects from gifts to home decor this coming year. I'll also be featuring fun items that will be given away on my Instagram page. Cats Christmas Craves!..."Peanut Butter Cookies 4 Santa"

Hey y'all...hope you had a great weekend. This is my favorite time of year. I love making gifts...baking and sharing with family and friends. I really pushed myself this year to not leave things to the last minute. I've been testing some of my recipes during the year...making a bit healthy-r and these peanut butter cookies have been a hit. Honestly, they are great anytime of year. They are super fast with no flour and easy recipe to get the kiddos involved. We all need to bake cookies for Santa :-) He'll definately love the lighter side of these cookies. I've been trying to cut back on sugar but we all know recipes can be a bit tricky. So I played with "Vanilla Bean Paste" in this recipe. Yes it's a bit pricey but for me it really gave the flavor the cookies needed when cutting back on sugar. But be ready for your family to gobble them up quickly. I also tested to see if they were 'freezer friendly." Lets just say....they were frozen for only 3 days and that's as far as we got in our home :-) Well, I hope you enjoy making these cookies and don't forget to leave a note for Santa saying they are flourless...I'm sure he'll enjoy that :-)

Cats Favorite Peanut Butter Cookies...

Here's all you need...

* 1 cup creamy peanut butter

* 1/2 cup sugar

* 1 egg

* 1 tsp. vanilla bean paste

* pinch of salt (optional)

Here's all you do...

* Preheat oven to 350*

* Line a baking sheet with parchment paper...set aside.

* Mix all ingredients in a large bowl...cover and refridgerate for about 30 minutes. This step is optional but I like how the cookie dough scoops better when a bit chilled.

* Scoop into balls and place on cookie sheet about 2" apart.

* Spray a fork with cooking spray and do the "traditional" criss cross design on cookie.

* Bake for about 9-12 minutes (ovens vary so check towards the end)

* Remove from baking sheet...sprinkle salt if desired and let cool in pan for about 5 minutes then transfer to wire rack to cool completely. on wire rack.

Makes about a dozen.

Cats Fall Fav's..."Pumpkin Pecan Pie"

 Hey y'all...hope your weekend is going great. I've been playing with a new design that I'll be featuring over on my quilting blog and dabbling in some fun recipes. I call it my "kind of multi-tasking" :-) If you're like me you love pumpkin pie and pecan pie but your baking time might be limited. Well you will love this pie. It comes together perfectly and it's a combination of both our favorites. Somesitmes it just nice to have a fast dessert that you don't need to worry about during all the Holiday rush. I love this pie because it's actually better when you make it ahead..like the night before and let it rest awhile. I do put it in the fridge...covered due to the eggs. Plus if you're a "empty nester" like me...you're not having tons of left-overs making just one pie. I will admit that my recipe uses "Pillsbury Pie Crust" but you can definately make your own if desired. The pic below shows the "crackling" of a traditional pecan pie but trust me...it gets covered with whipped cream. :-)  It's hard to believe that Thanksgiving is upon us and Christmas is right around the corner..right? Pumpkin Pecan Pie...

Here's all you need...

* 1 Pillsbury Pie Crust (unbaked)

* 3 eggs

* 1 cup sugar

* 1/2 cup dark corn syrup

* 1 cup pumpkin

* 1 tsp. vanilla

* 1/8 tsp. cloves (opt)

* 1/8 tsp. ginger (opt)

* 1/2 tsp. cinnamon

* 1/4 tsp. salt

* 1 cup pecans (few chopped for garnish)

* Pinch of Humor (must in my kitchen) :-)

Here's all you do...

* Preheat oven to 350*

* Prepare your baking dish as desired and crimp the edges of pie crust so it looks homemade :-)

* In a large mixing bowl...beat eggs and sugar until combined.

* Mix in  dark corn syrup...pumkin...vanilla and seasonings.

* Pour into pie crust.

* Top with pecans.

* Bake for about 50 minutes or until slightly firm (ovens vary)

* Let cool for several hours or over night

Garnish as desired and enjoy!

Berry Street Santa's Snippers...

Cats Fall Fav's..."Spinach Stuffed Shells"

 Hey y'all...hope you're having a great weekend. The temps in Florida have been cool-ish and I'm loving it. I love this time of year...especially in the stores. I'm one of "those" that love sseing all the Holiday decor out early. I guess it's the designer in me. It's funny to admit but every year I tell myself that I don't need anything else then I see the cute decor and of course need it. I look at it this way....I"m mult-task cleaning. I take down decor...heavy clean...add decorate for the next Holiday. Win...win! Along with decorating I love to bake. The smell of fall spices is wonderful and calms me. I even have a cinnamon scented candle that I use all year in my sewing room. Well, todays recipe is super easy and a great to feed a crowd. I make more casserole's during the warm months but will admit it's a new fav for all year. I use a Italian Panco Bread crumbs for the topping that honeslty brings this simple recipe to the next level. I forgot that step recently and it made a huge difference. The pasta shells are the jumbo size so I basically estimate 4 per person but cook a few extra in case they tear. Well...this is the time of year when weather is changing and sometimes it's hard to plan for comfort family dinner. This will definately take you too eating out..just serve with a side salad and some breadsticks :-) I thank y'all so much for following and check back soon for more fall fav's. Enjoy!

Cats Spinach Stuffed Shells...

Here's all you need...

* Jumbo pasta shells 

* Tostitos Creamy Spinach dip 

* 24 oz. Jar of 4 Cheese tomato sauce

* 1 c. shredded mozzarella cheese

* 1/2c. Italian Panco Bread Crumbs

* Pinch of humor

Here's all you do...

* Preheat oven to 375*

* Cook pasta shells until aldente'...drain...set aside.

* Spray bottom and sides of casserole dish with non-stick cooking spray.

* Cover bottom only casserole dish with sauce.

* Fill each pasta shell with about a Tablespoon of spinah dip.

* Place in casserole dish with sides touching (keeps them from spreading apart while cooking)

* Cover with tomato sauce...then shredded cheese and sprinkle with the panco bread crumbs.

* Bake covered for about 20-25  minutes or until fully cooked (ovens vary)...uncover and bake for an additonal 10 minutes or until bread crumbs get a little golden...crunchy :-)

Cats Fall Fav's..."Rustic Apple/Pear Tart"

 Hey y'all....hope you're having a great week. This is the time of year where I tend to go a bit nuts. I love Fall...the backing...decorating...sewing...you name it. And yes...everything "Pumpkin Spice." I'm sharing some of my "Fall Fav's" that are easy and great for entertaining. My "Rustic Apple/Pear Tart" is probably my favorite because it looks like you spent all day in the kitchen. I shared this years ago on my blog and I make it every year. This is what I like to call a "Holiday Classic." The ingredients and directions are on "12-9-14" post. This tart is great by itself or serve with whip cream...ice cream or just a fork :-) The smell is wonderful while it's baking and will impress your family and friends for any gathering. I named it "Rustic Apple/Pear Tart" due to how simple the layering of the crust is and you can't go wrong. I thank y'all so much for following and check back soon for more Fall Fav's. Enjoy!

Wild about ABC's...Children's Learning Quilt!

 Hey ya'll....hope your week is going great. I wanted to share with y'all my new advaenture that's happening on my Quilt Bog. I'm finally sharing my passion of designing Children's Learning Quilts. This has been in the makings for a while and the first of many is on the blog. I designed a Children's Wall quilt called "Wild About ABC's" using the stunning collection "Sunset Studio" gifted to me from Lumin Fabrics. Oh my gosh the collection is sew beautiful with vibrant hues and prints that will inspire any craft or quilting project. The wall decor is 15 1/4 x 47 all created with one simple block (square-in-a-square.) I'll be featuring techniques a long the way from beginner to advanced so pop on over and join in on the fun. Cats Easy Graham Cracker Crust!

 Hey y'all...hope you're having a Happy 4th of July weekend. I'm enjoying my short vistit in Texas with my daughter's family. I alway's say..."cherish every moment." If you've been watching the news you know exactly what I mean. The Texas flooding is devastating...I have no words...except 'please pray for all." As a mother...Gege...I just can't imagine the pain families are going through. I raised my daughter near the Guadalupe river. I've seen the devasation years ago when the river rose. So if you're reading this...hug your child...your loved ones....life is precious and can change in an instant. I hope you are having family time during this Holiday or gathering with friends. This no fail...easy graham cracker crust is super easy and delish. I love a graham cracker crust due to it being so versatile. I use this pie crust recipe in most of my pies. You can bake it ahead before you fill or just place in fridge to set up. I will warn you if you do bake it be ready for the aroma of walking into a bakery. Oh my goodness...the hint of cinnamom and my secret ingredient "walnuts." will leave your kitchen smelling wonderful. Yes...you can buy a graham cracker crust already made but I'm hoping the easy recipe inspires you to make your own, I'll be sharing soon some receipes for your summer recipes using this fun & easy recipe. Honestly...if you're like me...I love a graham cracker crust all year! ;-) I thank y'all so much for following and check back soon for more easy and versatile recipies. Here's all you need...

* One "sleeve" ...pkg. graham cracker crust 

* !/4 cup walnuts

* 2 Tb. granulated sugar

* 1 tsp. cinnamon

* 6 Tb.melted butter

Here's all you do...

* Prepare your pie crust pan as desired. 

Tip...I prepare mine by coating the bottom and sides using a stick of butter then I cut a piece of parchment paper to the bottom of pie pan size. This helps with easy removal when slicing your pie ;-)

* Pulse all ingredients (except butter) in food processor until smooth.

* Add in melted butter and pulse until it becomes a crumbly texture.

* Place in pie crust and use a spoon or use the bottom of a meauring cup to smooth crumble on bottom and up sides.

Tip...I use my fingers at the top to help smooth the edges but don't over think it...for me the more rustic is better. Your pie crust will definately impress your friends and family with a "homemade vibe" but it's easy and delish. My kind of entertaining!

Cats Tip of the day!..."Table Runner 2a Mock Roman Shade"

 Hey y'all...hope you're having a great weekend. I wanted to share a home decor tip with you that I recently finished. I have one of those long odd sized window in my bathroom. It does have the privacy glass but I wanted something decorative on the window. I didn't want the expense of a blind and recently while shopping I saw a textured table runner that would fit my odd sized window (13 1/2 x 40) and it was already lined. Well y'all...pop on over to my quilting blog for the rest of the story ;-) Yes...it did and I was pleased....20 bucks well spent and no sewing required. I love it when a "home decor" project comes 2gether! All the supplies...tips and techniques are on my quilt blog. Got Scraps?...make a Unique...Lake Garden Flag!

 Hey y'all...hope everyone is having a great week. I've been hosting a series over on my quilt blog that I would like to share with y'all. If you're like me you have "scraps" from sewing projects. Well recently I designed my own "Lake Garden Flag" in EQ8 using my scraps from Sunlit Garden by Lumin fabrics. I posted Phase 2 on quilt blog this morning so it's up and ready for y'all. I do by my garden flags but I will admit this will be the first of many "fun..fast n fab" projects that I'll be sharing. I love a project that uses those scraps...dont you? So here's a funny...I bet y'all thought scraps...and you we're thinking left overs...right? I do have some easy recipes too coming soon. I've been "testing" some healthi-r recipes that I'll be sharing soon. For me...it's all about trying new ingredients. But I will admit...I'm a bit picky. So I've been perfecting them before I share. I can't have a lot of ingredients due to my immune system but please note always adjust the ingredients to your family's needs. My needs have changed as I've gotten a wee bit older plus I need to loose a few pounds and my hub needs to gain. If life was simple I could just give him my extra pounds :-) Sometimes ya just need to laugh! I thank y'all so much for following and popping over to my quilt blog too. Talk soon!

Cats "Chili Mac n Cheese" 2 Ways!

 Hey y'all....hope your having a great weekend. I've been catching up on my quilting as the weather has been a bit crazy. Seems weird to share a recipe that has the word "Chili" in it but these days I still like a comforting meal. Also, I'm sure some of y'all have kiddos at home for "Spring Break." Honestly, what I'm about to share with you is...we eat this "Chili Mac" all year. It all started when my sweet grandson wanted my mac n cheese and I was also making chili. Due to his sports and working out he wanted a high protein snack. Well...if you ask me adding beans to anything amps up the protein level. I made some pasta noodles added in some of the chili then we went all out and melted in velveeta cheese. Yup..."Chili Mac n Cheese" was born! What's funny is the next time you go out to dinner look at the children's menu. Seriously...Mac n cheese is now a meal :-) So technically I don't feel a bit guilty when I eat it too. Just in moderation :-) What I love about this recipe is it's super fast...great for those hectec nights with the kiddos and it's very satisfying. It's great to serve with a side salad or have on hand for the kiddos. It warms up easy & even taste pretty good cold too. My grandson version now is the second version of this recipe. It's quick and easy for a fast in between meal or snack. You could even add in your favorite meat to really amp up the flavor. I hope you give this a try with your kiddos or even your big kids. Oh did I mention the best part...it's a One Pot dish :-) Wishing everyone a fun & safe spring break. Here's all you need...

* 1 18oz. can Bush's Chili Beans (mild flavor)

* 1 10oz. can Old El Paso Red Enchilada Sauce (mild)

* 1 15.5 oz. can Bush's Best Cannellini Beans (drained)

* 1 pkt Herb ox granulated chicken bouillon

* 1 cup water

* 3/4 c. small mac noodles

* Salt/pepper to taste

* Pinch of humor :-)

Here's all you do...

* In a large skillet prepare following over medium heat....

* Add in all ingredients to pan except the bouillon and water.

* Cook over medium heat until combined.

* Cover and simmer until noodles are tender. Add more warm water if needed due to pasta will absorb the water while cooking.

* Season to taste.

Or...

* Prepare as above but add 1/2 cup chopped velveeta cheese and substitute mac noodles for "No Yolk Noodles." Cook as above. My grandson loves these noodles due to they have a bit more protenin :-)

Either way the kiddos will love :-)
