"Left-over Lovin'....Anytime of Year!"

 Hey everyone...hope all is well and you're enjoying this festive time of the year. I'm "slowly" getting back to norm if there is a norm lately. Still needing to be careful and resting so I decided to use this time to get recipes and tips caught up instead of complaining. Truth be told this is not my time of year to "take it easy"....I love the Holiday's but as I've gotten a bit older things are done differently and especially lately. So I'll be sharing some of my classic family recipes....some gift-giving ideas that will help a loved one in the kitchen and just some fun "inspiration" to get us through the holiday rush. With that note today's recipe I will be sharing is a "staple" in my family all year round. I do use this recipe with leftovers (turkey especially) but also do the same technique with just sandwich meat slices. Seriously you cannot go wrong with anything wrapped up in a puff pastry sheet...right? As one of my favorite Chef says...it's all about the taste if it turns out pretty... well...that's a bonus :-) 

And I always say...."the best ingredient is a Pinch of Humor in the kitchen"

"Turkey Puffs w/ a honey mustard sauce"


Here's all you need...

1 thawed puff pastry sheet
left over turkey thinly sliced (or sandwich meat)
4 slices of American cheese
1/4 c of colby jack finely shredded cheese (or your choice)
1 egg (I love Eggland Best)
Flaky Salt

Here's all you do...

*Preheat oven to 400*
*Line a baking sheet with parchment paper.
*Use a piece of parchment paper to unfold your puff pastry on so it doesn't stick and also makes an easier work service for clean up :-)
Tip...I use a rollin pin and roll my pastry into a bit larger piece.
*Using a knife...divide your pastry into four squares.
*Make an egg-wash (egg mixed with a little water) and go around the edges with egg wash with your finger or pastry brush. This will help seal the edges.
*Place one slice of cheese on each square of puff pastry.
*Then top with sliced turkey or your preferred meat and sprinkle some grated cheese on top.
Tip...if you like spice this would be the time to add your preferred spices.
*Fold over one side to forn a triangle and crimp the edges using your fingers or use a fork for a more decorative look. 
*Place your "Turkey Puffs" on your parchment lined baking sheet. (see pic below)
*Brush the tops with egg wash and make 3 slits on top with knife & sprinkle with some flaky salt if desired.

Bake for about 15-20 minutes (ovens vary) or until the pastry is cooked until done. 
Serve with a honey mustard dip. I buy honey mustard and then add a bit more honey and some jalapeno juice for a kick and whisk until combined.

Note: You "might" have a goo-ey cheese pull before and during your eating process.

"Update....Step Stool & a Trip was not in the plan"

 Hey everyone...hope all is well. Wanted to update you of what's been happening....I started my series..."Lovin' Fall Y'all" & boy did I "Fall." I took an unexpected trip with a step stool and needless to say for the last 6 wks it's been hard to sit...stand...basically do anything while recooperating with pulled muscles in my ribs. I am "thankful" at my age that I didn't break anything. I bruised my body and my ego for being so "careless" & I'm upset that I havent been able to post my fall recipes. Anyway...life continues and pain meds and rest has helped. So stay tuned and I hope y'all are starting your "fall" off better than I have :-) Stay safe & talk soon!

Lovin' Fall Y'all...."Chicken Stuffed Peppers"

 Hey everyone...hope y'all are having a great weekend. Well it's all over the "news"....Saturday started the first day of fall. I love this time of year...seeing the trees change colors....cool nights...but mostly "fall cooking & baking." For some reason I get really excited....maybe it's the family gatherings...wondering what to make the next time I'm cooking with my daughter...or just the "smell" of pies in the oven. This is when I actually do love to shop....seeing pumpkins and fall decor everywhere. If y'all know me although I love to cook...I hate shopping. Weird...right :-) It would be my absolute dream to decide on what I'd love to cook & have all the ingredients. Hmmm...so back to reality!

Today starts my series...."Lovin' Fall Y'all"....fun...delicious recipies with a 'healthy twist." I've had to really scale back on some meat items lately but realized it's all about the blend of ingredients. Produce this time of year is stunning. The fall produce colors will make you want to stuff everything from peppers to squash. My recipe today is "stuffed" with ground chicken but you can make this all vegatarian if you wish. I love mixing textures when stuffing peppers. Now you can find so many "gluten free" items for replacement of traditional panco bread crumbs so feel free to substitute per your dietary needs. 

But remember...as I always say..."the best ingredient is a pinch of humor" in any recipie.

Here's all you need...
1/2 pound pre-cooked ground chicken (or your desired meat)
Fall peppers (small red...orange...yellow)
Zucchinni...mushrooms...shallott
Shredded Mozzarrella cheese
Italian Style Panco Bread Crumbs

Here's all you do...
Preheat oven to 400*
Spray a "cupcake tin" with cooking spray
Prep veggies...wash & finely dice
Saute veggies in grapeseed oil or your desired oil * season to your liking. I use garlic powder & worschester sauce in all my meats & veggies. Remove from pan. Cook your desired meat if you haven't done so already. I love to cook a pound of ground chicken and reserve half for recipes. It's ready to go for recipes when your in a time crunch.
Add in your cooked meat to your vegatables & season as desired.  
Cut the tops of your peppers. Don't throw them away...dice them up...store safely for later use. 
Clean out the inside of your peppers & place in your muffin tin...tops side up.
Fill 3/4 full with meat filling
Top with Mozzarella cheese then sprinkle panco bread crumbs on top.
Bake for about 25-30 minutes or until peppers are tender. (Ovens vary)
Remove from pan & plate/serve as desired.
I love to serve on a bed of lettuce drizzled with a fat free salad dressing then place the peppers on top. This recipe is very versatile...from an appetizer to a main corse...just depends on how you serve it :-)

"Scrapin' w/Cat" Quilt-a-long...."Cat's Cookie Cutter Christmas" starts today!

 Hey everyone...hope your week is going well. I wanted to share my "Scrap Quilt-a-long" with you. It's that time of year already when Christmas will be sneaking upon us. My designs are from Country to Coastal to Christmas and will make great gifts for any season all using the "snowflake cookie cutter below" They feature techniques from beginner to advanced....easily enlarge & have coordinating "mini" projects too. "Scrapin' w/Cat Quilt-a-long" starts today :-)

 Hey everyone...hope your week is going well. I wanted to share my Scrapin Quilt-a-long with y'all that started today on my quilt blog. It's already September and this would make a great gift for any occasion. I love fun & easy projects that use up my "scraps." I'll be posting more on my quilt blog but this one kicks-off the series! "Scrapin' Coastal Fold-n G0 Tic-Tac-Toe" Scrap Fabric for the each square and quilted with Aurifil thread. Hope you pop on over to my quilt blog to follow along. "Have a Blessed Labor Day Weekend!"

 Hey everyone...hope all is going well. My heart & prayers go out to everyone who has suffered with these storms. Mother nature has been a beast lately & it's so hart breaking watching the news & seeing the devistation. I'm praying that help gets to everyone fast and families know that everyone around the country is praying! It is Labor Day Weekend and I do want to thank those who are keeping our Country safe and helping the ones in need. Stay safe & strong!
